For the banana cake, squeeze the lemon. Peel the bananas, cut into slices and place in a bowl. Immediately pour the lemon juice over them and puree with a hand blender.

Mix butter, sugar and vanilla sugar well, then stir in the eggs. Mix flour and baking powder. Stir mashed bananas and flour alternately into egg and sugar mixture.

Butter a baking sheet with high sides. Spread half of the mixture on the tray. Mix the second half with the cocoa powder and gently spread on top of the light batter. Run a fork through the dough in a spiral so that the two masses mix nicely.

Bake the cake in a preheated oven at 150 °C for about 35 minutes, if necessary cover the cake with aluminum foil for the last ten minutes.

Chop the white chocolate coating and melt it with 1 tablespoon of butter over steam – do not let it get too hot! Coat the cooled banana cake with the white chocolate coating.
