For the banana cake, beat egg whites until stiff. Beat yolks, soft butter, sugar, vanilla sugar and rum until fluffy. Mash bananas with a fork and mix in.

Fold in coconut flakes, flour and baking powder. Carefully add the snow. Pour the mixture into a buttered and floured baking pan and bake in a preheated oven at 170 °C for approx. 45 minutes.

Spread the warm cake with jam and let it cool down. Slice bananas and place on top of cake.

Pour chocolate glaze over the cake, let it dry a bit and sprinkle with coconut flakes.
