Peel the papaya like an apple, cut in half, fish out the seeds with a tablespoon, cut the fruit into small cubes. Use shallots with green, cut into small pieces. Sauté the shallots (1) in oil and spread them in the plates as a garnish just before serving. Peel and chop the garlic cloves. Cut open the chiles, remove the seeds and then cut into small rings. Cut the lemongrass into small slices. Before doing so, cut the roots into small pieces and remove the outer, hard leaves. Only the tender lower part should be used. Next, heat the clear soup, add the shallots, the garlic cloves and the chilies, let the whole thing boil.

Gently simmer for 2 minutes, then add the lemongrass, papaya and shrimp paste. Gently simmer until the papaya is soft. If the clear soup boils too much, just add a little more liquid (clear soup or possibly water). Season with pepper, salt and ginger and garnish with fried shallots.
