Perhaps your new favorite bean dish:

1. brush the potatoes and prick them a few times with a fork. Bake in the heated oven at 180 °C /gas mark 4 for 1 to 1 and a quarter hours, until the potatoes give way when pressed lightly. 2.

2. 20 minutes before the end of the baking time, start preparing the beans. Heat ghee or possibly oil in a saucepan, add onion and sauté over low heat, stirring frequently, for 5 min. Add turmeric, cumin, garlic and curry paste and sauté lightly for 1 minute.

3. Stir in tomatoes, black-eyed peas and red juice of one lemon, kidney beans, paradeis pulp, water and chopped mint. Season vigorously with salt and freshly ground pepper, then cover and simmer on low heat for 10 min, stirring frequently.

4. cut cooked potatoes into halves and lightly mash the flesh with a fork. Prepared bean mixture on top form, place on warm serving plates and bring to table on the spot.

Potatoes baked in the dish, topped with a tasty bean mixture in a spicy sauce. A delicious, filling and high fiber dish.

cross them in at the top and gently press them to open at the top. Fill some prepared mixture into the cross. The remaining filling next to it form.
