For the baked potato slices, peel potatoes and cut into slices about 1 cm thick. Season potato slices with salt and pepper.

Beat eggs and whisk. Dredge potato slices first in flour, then in egg and finally coat with breadcrumbs. Heat vegetable oil in a frying pan.

When the oil is hot enough, fry the potato slices in it. Drain the baked potato slices.
