Instructions:

First prepare the dough for the baked apple cookies. First mix the dry ingredients (spelt flour, baking powder, sugar, vanilla sugar and lemon zest). Now add the warm margarine to the dry ingredients.

Finally, mix in the small egg. Knead the dough nicely, but not too long. Wrap in plastic wrap and place in the refrigerator to rest for at least 1-2 hours.

In the meantime, prepare the filling: To do this, wash, peel and finely grate the apples. Sprinkle with a little lemon juice to prevent them from turning brown. Put them in the fridge and let them marinate.

In another bowl, mix/shortly knead the remaining ingredients together. Squeeze the prepared apples and mix into the filling. Allow everything to pore through and refrigerate.

If the filling is too soft, mix in some spelt semolina. Now roll out the short pastry thinly and cut out circles. Place a dab of filling in the center, fold and roll into a ball.

Place on a baking tray and bake in the preheated oven at 180 degrees hot air until they are nice and golden brown. Let cool slightly and sprinkle with cinnamon sugar or glaze with icing.
