You should definitely try making this delicious dessert. It not only tastes good, it looks just as pretty and is also extremely healthy.

For the dough, put flour in a suitable bowl. Make an indentation in the center. Mix milk, salt, egg yolks and water in a baking bowl. Gradually stir mixture into flour with a whisk, starting from the center. Rest dough for 30 min. to allow flour to swell.

Beat egg whites and vanilla sugar in a baking bowl with a whisk or electric beater until stiff and fold into the batter. Rinse elderflower umbels under cold water. Gently dry with household paper.

It looks fun to leave the cone stems on and table the cakes that way. But if you want to be really delicate, you need to cut the stems into small pieces.
