For the bacon corn casserole, fry the bacon in a large pot until crispy, remove and dice.

Melt the butter in the pot and sauté the onion until translucent. Add the tomatoes, masicorns, diced peppers and parsley to the pot and simmer until the peppers are soft.

Season the bacon-corn casserole with salt, pepper and nutmeg and serve.
