For the avocado-mango salad, first prepare the dressing. For this, very finely dice or crush the garlic clove, sauté in oil (do not brown).

Shake cooled garlic oil together with lemon and orange juice in a jam jar until “frothy”. Season with salt and pepper. Peel avocado and mango, finely dice flesh.

Immediately mix with the dressing (especially the avocado so it doesn’t turn brown). Remove seeds from tomatoes, also cut into fine cubes. Fold everything in carefully, season with salt and pepper.

Sauté shrimp in garlic oil with garlic to taste. Arrange the salad on plates with the help of garnish rings. Place a shrimp on top of each.

Skewer a slice of prosciutto on a toothpick. Garnish with some chives.
