For the avocado lemon cake in a jar, first halve the avocados lengthwise, remove the pit and scrape out the flesh with a spoon. Place in a tall mug with the lemon juice and finely puree with a hand blender.

Cream butter, sugar, vanilla sugar and salt with a hand mixer, beat in eggs one at a time. Mix flour, baking powder and grated almonds and stir in alternately with the avocado puree and milk. Grease Rex glasses well with lukewarm butter and fill the dough up to the center. Bake in preheated oven at 150 °C for about 30 minutes. Test with chopsticks.

For the icing, mix 2 tablespoons lemon juice, lemon zest and powdered sugar until smooth. Pour the icing over the overcooled avocado lemon cake in a glass and sprinkle with the pistachios.
