Remove the peel from the asparagus spears and boil them in salted water with a pinch of sugar until soft.

For the sauce, start by finely chopping the shallot and sauté in butter until soft. Stir in the flour, add the stock cube and stir in the whipped cream with a whisk. Season with thyme, nutmeg, pepper and salt and remove the pot from the stove. Finally, coarsely grate the cheese and fold it in.

Rub the asparagus spears dry, arrange them on a platter, place the ham on top so that the asparagus heads remain visible. Cover with the sauce and gratinate under the broiler for another minute.

Tip: Always use an aromatic ham, it will add a wonderful touch to your dish!
