A recipe of asparagus for gourmets:

1. remove the peel from the asparagus spears from the head to the end, cut them into quarters lengthwise and put them with the asparagus peels and cuttings into the boiling salted water form, season with a pinch of sugar and a tsp of butter and cook the asparagus spears for 20 minutes.

Drain the asparagus, reserving the clear soup and drain the asparagus well.

3. 750 ml asparagus broth in a saucepan, the bouillon extract, the whipped cream and everything together 5 min quietly lightly bubble.

Season the soup with nutmeg, pepper, salt and a pinch of sugar, add the asparagus pieces and the shrimps, remove the soup from the heat and add the egg yolk.

Sprinkle with dill and bring to the table.

Very lazy replace the ‘elaborate’ sauce with a bag of crab soup (baeaeaeaeh).
