For the asparagus salad with balsamic vinegar, radishes, pine nuts and garden cress, first cut the brown bread into small cubes and drizzle with a little olive oil and toast in the oven until crispy.

With a peeler, peel the raw asparagus lengthwise so that you get fine long strips. Season the asparagus with a teaspoon of salt and sugar and mix well.

Slice the radishes, mix them with the cress and the pine nuts in a bowl, mix the balsamic vinegar with honey and olive oil and season with salt and pepper.

Season the asparagus with the marinade, and season again.

Marinate the asparagus salad with it, sprinkle with the bread croutons and garnish with some garden cress.
