For the asparagus in hollandaise sauce, wash, boil and peel the potatoes.

Peel and cook the asparagus.

For the Hollandaise sauce, mix yolks, milk and cornstarch. Heat butter and quickly stir in the other ingredients. Season to taste with nutmeg and salt.

Arrange the asparagus with potato and sauce and serve the asparagus in hollandaise sauce.
