Instructions:

For the Asian steamed fish with rice noodle salad, first marinate the fish with the other ingredients for about 1 hour, place in a steamer tray without holes and steam at 65 °C for about 10 minutes (or roast on a baking tray at 170 °C for about 8 minutes).

For the pasta dressing, mix all the ingredients together in cold water and bring to the boil once.

Pour boiling water over the noodles and let them stand for about 5 minutes. Then drain.

Cut the oyster mushrooms into bite-sized pieces and sauté them in 4 tablespoons of oil together with the garlic and the white part of the young onion. Mix with noodles, spinach, mint, young onion greens and cilantro and season with the dressing.

Arrange the fish on the noodles and serve the Asian steamed fish with rice noodle salad.
