Have fun preparing this mushroom dish!

Mix eggs with milk and season strongly with sambal oelek, soy sauce spicy, salt and freshly ground pepper. Drain bamboo shoots and bean sprouts. Clean and rinse peppers and leeks. Cut peppers and leeks into fine rings, oyster mushrooms into pieces.

Heat half of the clarified butter in a frying pan, sauté peppers, leeks and snow peas for 3 minutes. Add bean sprouts and bamboo shoots and lastly oyster mushrooms and sauté for another 2 min. until soft. Season vegetable filling with Far Eastern tomato ketchup and soy sauce. For the omelettes, heat the rest of the clarified butter, pour in a quarter of the batter per person, fry until the edges are set. On one half of the omelet vegetable filling form, fold the other side over and finish cooking.
