For the Asian beef stew, first peel and finely chop an onion and ginger. Finely chop the chili pepper (for less spiciness, remove the seeds first). Trim the beef and cut into cubes. Season with salt and pepper.

Heat ghee in a pot and fry onion, chili and ginger. Add the beef and fry. Dust with flour, then add the curry powder and fry briefly. Pour in the beef stock and add a little fish sauce. Simmer until the beef is tender but not falling apart.

In the meantime, peel the other onion and cut into strips. Cut the chives into longer rolls.

Pour the Asian beef stew into bowls and serve sprinkled with onions and chives.
