For the arugula and cheese salad, wash the arugula and tomatoes. Divide the arugula between two large plates, cut the tomatoes in half and place them decoratively on top of the arugula.Marinate the salad with balsamic vinegar, 1 teaspoon each of olive oil, salt and pepper. Using a cheese slicer or a peeler, shave fine shavings of cheese over the top.Cut the baguette into slices. Cut the garlic clove in half and rub the slices of bread with the cut surface. If necessary, toast in the oven at 180°C for 10 minutes.
