For the apricot puree, wash and dry the limes and grate the zest into a large saucepan. Then squeeze and add the juice to the peels. Place 1/4 of the apricots in a bowl.

Cover with boiling water and drain after 30 seconds. Peel apricots – it’s easy now – and remove seeds. Add apricots to the lime juice and stir through.

Treat the remaining apricots in the same way. Add the jelling sugar and mix well, cover and let the mixture stand for about 1/2 day. Then enough juice has formed and you can heat the pot until the mass boils.

Boil the apricots in it for about three minutes and then puree with a blender. Bring to the boil again, skim if necessary, pour boiling hot into twistoff jars and seal immediately.
