Instructions:

For the walnut-mango salad, rinse and peel the cucumber and cut into fine pieces with the mango, walnuts and red onion. Then put everything in a bowl.Mix balsamic and olive oil and pour over the salad and season with salt and pepper.Let stand for a little 10 minutes.

For the apricot omelet, cut apricots into pieces and fry in a pan. Mix eggs, water and melted butter with finely chopped pak choi and pour over the apricot pieces. Fry until the eggs form an omelet. Remove the omelet from the pan and let it cool a little.

Then cover half of the omelet with the lettuce and sprinkle with grated parmesan.Fold the omelet and cut into pieces.

Serve the apricot omelet with walnut-mango salad with fresh pak choi or spinach.
