For the apricot jam, pluck the lemon balm leaves, quarter the apricots, mix with preserving sugar, citric acid and lemon juice and bring to the boil while stirring.

Boil for at least 5 minutes, stir in lemon balm leaves and immediately pour the jam into clean jars and seal well.
