For the apricot dumplings made from potato dough, cook the potatoes, peel, strain while still hot and salt. Potatoes, flour, semolina, butter and egg are quickly mixed into a dough.

Do not work the potato dough too long or it will become tough. Roll out the dough on a floured surface, cut out squares, place 1 apricot on each and form dumplings.

In a pot of water, boil the dumplings in salted water for about 10 minutes. Roast butter and breadcrumbs and roll the cooked dumplings in it.

Before serving, sprinkle the apricot dumplings with powdered sugar.
