For apricot dumplings from potato dough, first prepare the potato dough: To do this, wash and peel potatoes and cook in boiling water until soft, about 20 minutes.

Strain the potatoes and press them through a potato press. Knead well with egg, semolina, flour and softened butter. Wrap dough in plastic wrap and refrigerate for about 30 minutes.

Roll potato dough on a floured work surface into a long sausage. Cut slices about 3 cm thick from it and flatten them slightly. Now place an apricot on each piece of dough and wrap it tightly with the dough.
