For the Christmas apple syrup, first wash the glass bottles and lids hot and boil them. Turn them upside down and let them dry. Place them directly in the place where they are to be bottled (tray with cloth).

Put the spices without the cinnamon stick and vanilla in a muslin bag and tie tightly. Mix apple juice, lemon juice, cinnamon stick and spice bag in a wide, tall pot.

Cover and let steep for at least 2 hours. Then mix the apple juice mixture with sugar. Stir carefully, or remove the spice bag while stirring.

Then boil the mixture for about 8 minutes. Skim if necessary. Pass through a sieve, add vanilla and bring to the boil again.

Immediately pour Christmas apple syrup into bottles, to just below the rim, and seal. Turn upside down and allow to cool. Store in a dark and cool place.
