For the apple strudel, sift the flour onto the work surface and add the egg, butter, a pinch of salt and a little water into a small well. Quickly knead into a smooth strudel dough and let it rest at room temperature for about an hour.

Preheat the oven to 180°C.

For the filling, peel the apples, remove the core and the core of the apple. Cut the apples into coarse cubes. Sprinkle with the lemon juice and mix with the raisins and walnuts. Add a dash of rum for an even stronger flavor.

Melt butter in a pan and toss the breadcrumbs with a little powdered sugar and a pinch of cinnamon.

Flour the work surface and roll out the dough thinly until you can stretch it thinly in all directions with your hands (called “strudel pulling”). When the dough is thin enough, coat the bottom third with the breadcrumbs. (Alternatively, you can just brush the dough with melted butter and add the breadcrumbs to the filling). Then spread the apple filling on top, fold in the sides of the strudel, and roll into an apple strudel.

Brush the apple strudel with beaten egg and place in the oven for 40-50 minutes, until golden brown in color.
