For the apple pancake with walnuts, stir the flour with skim milk, egg yolks, salt, vanilla sugar, lemon zest and rum until smooth and fold in the beaten egg whites. Slightly heat the clarified butter and add it to the batter. Peel and divide the apple. Cut one apple half into quarters, spread it on the dough and put it into the oven preheated to 200°C.

When the dough becomes dry on top, turn it over and add some butter to the side. When the pancake has a nice color, tear it into lozenges with a palette, sprinkle with powdered sugar and caramelize in the oven at high heat for a few minutes.

For the apple pancake with walnuts, caramelize the butter with the sugar, cut the remaining apple half into wedges, add and quickly glaze. Once the apple slices have turned color, add the shelled walnuts.
