Instructions:

For the apple muffins with crumble, place paper cups in the muffin tray. Mix the ingredients for the crumble with the dough hook.

Peel and core the apples, cut into slices and marinate with a few drops of lemon juice. Preheat the oven to 180°C top and bottom heat.

For the dough, cream together spread, sugar, vanilla sugar and lemon zest. Mix flour, soy flour, starch flour and baking soda and add alternately with the soy milk. Finally, mix in the lemon juice.

Pour the batter into the muffin tins, place apple slices on top and sprinkle the crumble on top of the apples. Bake for 40-45 minutes until the crumble is golden brown.

If you like, sprinkle some powdered sugar on the apple muffins before serving.
