Remove the skin from the apples, cut them into quarters, remove the core, then cut the fruit into small cubes. Put them in a frying pan and mix them on the spot with the juice of one lemon, so that the apples do not turn brown.

Remove the peel from the mangoes, cut the pulp from the stone and this also cut into small cubes. Add to the apples form.

Add the jam sugar to the fruit. Slit the vanilla stem lengthwise and add together with the scraped out seeds. Mix everything well and let it sit for about an hour.

Bring the fruit mixture to a boil, stirring, and cook until bubbling, about 4 minutes, according to the directions on the jelling sugar package. Immediately fill into clean jars with twist-off lids. Keep cool and dark.
