For the apple lattice cake, prepare a shortcrust pastry. To do this, combine the dry ingredients (flour, baking powder, sugar, vanilla sugar and lemon zest). Crumble in butter. Add eggs a little at a time to make a nice dough.

Knead a little more, wrap in plastic wrap and let rest in the refrigerator for about 30 minutes. Meanwhile, make the topping with apples, sugar, cinnamon and mulled wine spice and refrigerate. Roll out 2/3 of the shortcrust pastry on a baking tray covered with baking paper, spread the apple mixture on it and make a lattice with the remaining 1/3 of the shortcrust pastry.

For lazy people: grate the shortcrust pastry and spread it on the apples. Sprinkle with flaked almonds and sprinkle with water and bake in preheated oven, at hot air, for about 25 minutes. Remove the apple lattice cake, let it cool a bit and enjoy.
