For the apple kaiserschmarren separate the eggs. Beat the yolks with the milk, vanilla sugar and 1 pinch of salt until smooth.

Stir the flour into the mixture. Peel the apples, cut into very fine slices, add to the batter and mix well.

Beat the egg whites with the granulated sugar until stiff and fold into the batter. Melt the butter in a frying pan, pour in the batter, let it brown briefly and sprinkle the raisins on top.

Bake over low heat until done, then tear into pieces. Sprinkle the apple kaiserschmarren with powdered sugar and serve immediately.
