For the apple dough, mix the yeast well with milk. Add flour, egg yolks and melted butter, season with salt and grated lemon zest. Beat the egg whites with sugar until stiff and fold into the mixture. Then let the dough rest for 15 minutes.

Place the mixture in small heaps in a dalken or pancake pan lined with clarified butter and bake on the stove on both sides to form dalken. Fill two dalcons each with the apple filling shown opposite, spread with hot apricot jam and sprinkle with toasted almonds. If desired, serve a spoonful of whipped cream with the apple dalks.

For the filling, sauté the peeled, finely diced apples in hot butter. Add sugar, calvados, white wine and lemon juice and stew the apples until soft.
