Peel apples, quarter and cut into wedges. Bring to a boil with 150 g sugar and juice. Simmer on low heat for 3-4 min. Stir 300 ml eggnog and cornstarch until smooth, stir in and simmer repeatedly for about 1 min on low heat. Cool.

Mix flour and baking powder and sift into a large enough bowl. Add 100 g sugar, 1 pk vanilla sugar , salt, egg and softened fat and knead everything together to a smooth dough.

Grease a grease pan (approx. 32×38 cm) and roll out dough dusted with flour in it and prick it a few times with a fork. Spread lukewarm compote on top and bake in the preheated oven at 200 °C (convection oven 175 °C) for about 40 minutes. When cool, whip whipped cream in 3 portions until stiff, adding 1 pk cream thickener and 1 pk vanilla sugar. Shortly before serving, spread whipped cream loosely under cake. Coarsely chop cooking chocolate and melt in hot water bath.

Decorate cake with 75 g eggnog and chocolate strips. Dry.
