Peel the apples and remove the core.

Cut the apples into small cubes, finely chop the ginger and put it in a pot together with the wine, honey and cloves.

Add the saffron and let everything cook. Season to taste with lemon juice and honey. Strain the broth, if necessary, and return the apple pieces to the strained broth.
