Peel and core the apples and cut them into small pieces, the apples, peeled and cored, should yield 1 kg of fruit, put them in a suitable saucepan with an eighth of a liter of white wine and stir continuously until the apple pieces fall apart, then add sugar to the fruit pulp, Then make the pulp with the sugar, the juice of one lemon, the grated lemon peel and the vanilla pulp until it is very thick, grease a baking tray with oil and spread the pulp on it to a thickness of 1 to 1.5 cm, dry it in the oven at a low temperature or in a warm, airy place until it is firm and can be cut.

Now cut the apple cheese or cut out shapes and roll them in fine crystal sugar.

This confection should be stored in a cool place.
