Instructions:

For the apple-celery soup with celery chip, first preheat the steamer or combi steamer to 100 °C.

Peel the celery, apple and potato and cut into coarse cubes. Place in an unperforated steamer basket and steam at 100 °C for 5 minutes.

Now add the apple cubes, apple juice, whipping cream and vegetable broth, grained vegetable stock and salt: Steam for another 10 minutes. Then finely puree the soup with a hand blender (or in a stand mixer) and season again to taste.

For the celery chips, cut the celery into thin slices and deep-fry in hot fat to form chips, drain briefly on kitchen paper, then serve with the soup.

Serve apple-celery soup with celery chips.
