Instructions:

For the apple carpaccio, place 4 dessert plates in the refrigerator. Remove the core of the apples and cut the apples into thin slices.

Drape the apple slices on the chilled plates and squeeze half the lemon over them. Mix sugar, sparkling wine and apple brandy and marinate the slices with it.

Garnish with grapes, place a scoop of vanilla ice cream in the center of each plate and sprinkle a pinch of cinnamon over the apple carpaccio.
