Drain the sauerkraut, coarsely chop and place in a suitable bowl. Rinse the apple, pat dry, quarter, core and cut into sticks. Immediately mix into the sauerkraut. Cut the ham into short strips and stir in as well. Mix crème fraîche with sugar, parsley, juice of one lemon and pepper. Fold in the nuts. Carefully mix the dressing with the remaining ingredients. Allow the lettuce to stand for a short time. Serve with whole wheat baguette or possibly whole wheat toast for a hearty meal.
