Wash the spinach and drain in a sieve. Dice the mango, cut the carrots into thin sticks and mix with the spinach in a salad bowl.
Toast cashews in a pan without oil and set aside.
For the dressing, pour olive oil, maple syrup, vinegar, salt and pepper into a screw-top jar and shake well.
Spread dressing over salad and mix well.
Dress and garnish with cashews.
