Chocolate espuma: In a small saucepan, heat the sugar, chocolate, cream and coffee until the chocolate is completely melted. Let the gelatine, soaked in cold water and squeezed out, melt in the chocolate. Stir until cooled on iced water and pour into an “isi-Profi- Whip”.

Pineapple Espuma:

Mix pineapple juice with sugar (as desired) and stir until completely dissolved. Strain through a sieve. Heat gelatin soaked and squeezed in a tiny bit of pineapple juice (about 60 degrees ) and stir into pineapple juice. Cool the pineapple juice and fill into an “isi-Profi-Whip”. Foam both espumas on plates, bring to the table with chocolate lattice and pineapple pieces.

Tip: Do you prefer milk chocolate or dark chocolate? Depending, use whichever you like better.
