For the vegetable rice, lightly fry the finely chopped onion in a little oil. Then add the bell bell pepper, also fry a little. Add the canned tomatoes as well, reduce the heat and saute everything for a bit.

Meanwhile, wash the rice and add it to the mixture in the pot. Add 1 1/2 cups of water and salt. If you like, you can add a soup cube.

Cover and simmer on low heat, stirring occasionally so that nothing sticks to the bottom.

If the rice is still crunchy when the water is used up, you can add a little more – if the rice is already cooked through and there is still too much water left, turn up the heat and remove the lid from the pot.

Attention: stay by the stove and keep stirring, otherwise the rice will burn! The vegetable rice is ready when the rice has the desired consistency and has taken on a slightly reddish color.
