For the medlar salad, peel and core the medlars, cut them into small pieces and season with a little honey and the juice of a lemon. Mix in half of the pine nuts.

Then pour into a dessert glass. Sprinkle the remaining pine nuts on top, dust with powdered sugar and decorate the medlar salad with mint leaves.
