For the nougat buttons, quickly knead a shortcrust dough from flour, sugar, butter, Spekulatius spice and the yolk and chill for approx. 30 minutes. Roll out the dough to a thickness of about 3 mm and cut out small circles.

Place the circles on a baking tray covered with baking paper and bake in a preheated oven at 180° for about 10 minutes. Allow to cool and refrigerate.

Heat the nougat in a bain-marie, allow to cool slightly, place in a piping bag and pipe onto the cold cookies. Then chill again.

Melt the glaze, but do not let it get hot, otherwise the nougat will melt. Dip the nougat side of the cookies into the glaze and let cool on aluminum foil. Place the nougat buttons in a cookie tin and place between each layer of aluminum foil.
