Baked Salmon with Olives, Bean Pods, Anchovies and Tomatoes

A bean recipe for every taste:

Clean the beans, cook them in salted water until they are almost soft (approx.

20 min.) and strain the water. Put them in a suitable bowl with the cherry tomatoes and the pitted olives. Stir in the olive oil and a tiny bit of salt and pepper.

Briefly rinse the salmon fillets under cold water and dry. Drizzle the fillets on both sides with the juice of 1/2 lemon, then season on both sides with salt and season with pepper and form a small bit of olive oil over them. Preheat the oven, including the baking tray, to the highest setting. Place the salmon fillets on one side of the tray. Add the basil to the bean pods, olives and tomatoes and spread the mixture evenly on the other side of the tray. Place the anchovies over the beans. Bake in the heated oven for 10 minutes, then remove and bring to the table with lemon quarters.

Mayo or possibly aioli go well with it.
