For asparagus in the frittata nest, first peel the asparagus and cut into 4 cm long pieces. Cook the asparagus pieces in salted water with a pinch of sugar, a little butter and lemon juice until not too soft.

Drain the broth and keep a small part of it ready. Clean the green beans, cut them into 4 cm long pieces, blanch them in salted water and drain them in a sieve.

Remove seeds from bell bell pepper and cut into fine strips. Mix eggs with flour, milk and a pinch of salt to make a pancake batter and let rest for 20 minutes.

In a pancake pan with oil, bake thin golden pancakes one by one, cut into wide strips and keep warm.

In the meantime, melt the cheese in a pan, pour on some cream, season with salt and pepper and add some broth from the asparagus.

Add asparagus and green beans and heat in the sauce. Arrange the frittatas on a warmed plate in the shape of a nest, pile the asparagus with the green beans in the middle and garnish with strips of paprika. Serve the asparagus in the frittata nest.
