Smoked Tofu Strudel on Apple-Orange Slaw

Instructions:

Peel and finely chop the onion and garlic. Cut tofu into small cubes. Wash, pluck and finely chop the herbs.

Now fry onion and garlic in olive oil until golden brown, add tofu, fry and put aside. Beat 2 eggs and fry them in the pan, stirring several times. Mix fried eggs, tofu and herbs and season with salt and pepper.

Unroll puff pastry, top with filling and roll into a strudel. Brush with beaten egg and bake in oven according to package directions until golden brown.

For the cabbage, finely chop onions, peel and coarsely grate apples. Sauté onions in olive oil, add apples, add sugar and let caramelize. Season with soup seasoning, sauté and pour orange juice. Bring to a boil briefly, add sauerkraut and steam on low heat until soft, about 45 minutes.

Cut the smoked tofu strudel and serve warm with the apple-orange cabbage.
