For the lemon rings, preheat the oven to 180 degrees.

Mix the flour and starch.

Cream the butter with the sugar until very fluffy and then quickly stir in the egg yolks. Add 2 tsp lemon juice and the zest.

Finally, stir in the flour mixture and knead the mixture into a dough.

Leave to rest in the refrigerator for 2-3 hours.

Then roll out the dough and cut out rings or flowers. Place on a baking tray lined with baking paper, brush with beaten egg and sprinkle with hail sugar.

Bake the zirtron rings for about 10-12 minutes.
