Instructions:

*****- Preparation -***** Clean and rinse all greens for blanching, chop snake beans into pieces about 7cm long. Rinse everything in boiling hot tap water for about 2 minutes. Drain and let drain properly.

Rinse the melanzane and cut into slices about 5 mm thick. Remove peel from onions and chop into rings about 5 mm thick. Rinse spinach, shake dry and chop coarsely.

Heat oil in a frying pan. Mix eggs with half tsp salt. Add melanzane and onions through egg mixture, if desired. Brown greens in batches with or alternatively without egg mixture in frying pan over medium heat for about 2 minutes, remove, degrease on paper towels and keep warm. Mix spinach with egg mixture and bake in skillet over medium heat about 2 min. on each side until eggs are firm. Chop into diamond-shaped pieces.

Offer all ingredients on a large platter and place on table with tomato dip with mince.

*****- Note -***** This spicy green dip is popular everywhere in Thailand. The Thai people carve the various vegetables into elaborate shapes. Now, of course, this dish looks even prettier.
