Perhaps your new favorite bean dish:

Soak the beans overnight in enough water. In a separate saucepan, soften the bean seeds.

Clean all the vegetables and cut them into rough cubes.

Sauté shallots in a saucepan with olive oil, add garlic, carrot and potatoes, sweat briefly and fill up with clear soup. Do everything for 10 min, then add zucchini, celery, broccoli and chili. Make another 5 min. and finally stir in leek, tomatoes, the soft bean seeds and kitchen herbs. Boil everything for another 5 min. and season strongly with salt and freshly ground pepper.

Serve the soup in deep plates and for a special touch drizzle a little pesto on top and sprinkle with parmesan cheese.
