Instructions:

1. grease baking tray. Sift flour into a large wide bowl and mix in the residue from the sieve.

2. mix in yeast, sage and half of the sea salt. Keep 1 tsp. chopped garlic for sprinkling and mold the rest into the baking dish. Add honey together with the lukewarm water and knead a dough.

Put the dough on a lightly floured work surface and knead for about 5 minutes.

Place dough in a greased baking bowl, cover and let rise in a warm place for 1 1/2 hours until doubled in volume.

5. knead the dough again for a few minutes, form it into a ring and place it on a baking tray.

Cover and let rise for another half hour, until it springs to the touch. Remaining sea salt and the garlic over it form.

7. bake in a heated oven at 200 °C /gas mark 6 for 25 to 30 minutes. Cool completely on a broiler before serving.

This fresh bread is an ideal addition to salads and soups and is also suitable for vegans.
