Polenta: boil the water with the chopped onion, salt and bay leaf spice, add the corn semolina, stirring constantly, cook at a low temperature for about 40 minutes (or according to the instructions on the packet) until soft, then add the butter, season with freshly grated nutmeg.

Rabbit drumsticks: Sauté finely chopped onions and garlic cloves in olive oil in an ovenproof dish (not too hot and without turning color), place the seasoned drumsticks coated with mustard in the dish, pour in white wine, cider and soup, add bay leaf, cloves and rosemary. Let it boil briefly and add a little butter. Cook in a hot oven at 220 C, basting the meat occasionally.

Instead of polenta, the rabbit legs can be served with wide ginger or lemon noodles.
